Chicken Tacos with Guacamole Sauce

I think I have an addiction to tortillas! And it does not matter if they’re flour or corn, I just can’t eat enough of ’em! But this new addiction is closely linked to my new Cuisinart GR-3 Griddler. For lunch I do like something warm, even if I’m just having a sandwich I will toast the bread which makes the sandwich so much better! And I’ve found with my Panini Maker I can whip up a great sandwich with a tortilla and just about anything for the filling and it’s delicious!! If you’re looking for a great gift for someone, seriously consider a Panini Maker!!

To carry my new taste addiction into dinner I thought I’d make some chicken tacos. My schedule lately has been hectic so anything that saves me time is worthwhile and with Chicken Tacos I can have meat, salad and bread all in one! And we all know that if I can serve Mr. Tastebuds anything that does not require a knife and fork, he is beyond happy.

Guacamole Sauce
Recipe developed in the kitchen of BigBlackDog

2-3 Avocados, soft and ripe
2 limes, juiced or you can use 4 TBL lemon juice
2-3 cloves of garlic
Handful of fresh cilantro
Handful of fresh parsley
2-3 green onions, diced
1/2-3/4 cup tomatoes, diced
Salt and freshly ground black pepper to taste
Dash or 2 of hot sauce or cayenne pepper to taste

1. Slice the avocado in two. Remove the pit and skin and discard.
2. In a small bowl sprinkle the avocado with the lime juice. Avocado turns dark very quickly when exposed to air so make sure that all the avocado is covered with lime juice.
3. Put the avocado and any lime juice, plus garlic, cilantro and parsley into a food processor. Pulse until completely blended.
4. Scoop out the avocado mix into a small bowl and carefully blend in the diced tomatoes and green onion.
5. Add salt and pepper to taste.
6. Add the hot sauce to taste.

2 chicken breasts or you can use leftover chicken
Guacamole Sauce, recipe above
1 cup tomatoes, diced
1/2 cup diced green onions
1-2 cups sweet pepper, diced or sliced
1-2 cups cabbage or lettuce, sliced thin
Flour or Corn Tortillas

1. Saute the chicken breasts. Set aside to cool. When cooled cut into 1/4″ slices.
2. Put the sliced chicken, tomatoes, green onions, sweet peppers, cabbage or lettuce and guacamole in small prep bowls so people can make their own tacos.
3. Heat the tortilla by placing it on the open flame of your gas stove and toast it for about 20-30 seconds per side. If you don’t have a gas stove, you can put the tortillas on your gas grill and toast.

    Now I know what I want for lunch but I don’t have anything in the house. Time to get groceries for sure. The sandwich shop near my work charges 9.00 for a veggie sandwich with avocado in it. I don’t think so! I’ll make one of yours instead.

    I’m looking forward to taco & fajita season here…we usually eat them a lot in the summer when we can grill up the meat

    Wow, these tacos are a work of art unto themselves! I love how the yellow and orange peppers make them look a little bit more exotic.
