Well, so far I’ve used up 6 lemons of the 14 that were in my refrigerator and I do believe we are lemoned out for this week! But it’s nice to end on a high note with a fabulous dessert such as Lemon Graham Slice!
Lemon Graham Slice was posted on Garden Web’s Cooking Forum by Sharon who happens to live in the Canary Islands. It is an easy, delicious recipe and my husband loves it.

Lemon Graham Slice
Recipe adapted from Company’s Coming: 150 Delicious Squares
1 1/2 cups Graham cracker crumbs
1/3 cup packed brown sugar
1/2 tsp baking powder
1/8 tsp salt
1/2 cup butter
10 oz sweetened condensed milk
1/2 cup lemon juice
1 tsp vanilla
Bottom Layer:
Crumble first 5 ingredients together well and pack into 9 x 9 inch (22 x 22 cm) ungreased pan. Set aside.
Top Layer:
Combine milk, lemon juice and vanilla in bowl and stir. Spread over bottom layer.
Bake in 350°F (180°C) oven for 20 to 25 minutes. Cool and cut into 36 squares.
Notes: Since Sweetened Condensed Milk comes in 14 oz cans, I just use the entire can and increase the Lemon Juice to a heavy 3/4 cup and add the zest of 1 lemon. This makes a very good, puckery dessert!

Linda, This is one dessert that you would really like. It is so simple and fast, yet has a fabulous taste. I made this…oh maybe a year ago and since that time I always keep Sweetened Condensed Milk in my cupboard. And it’s great topped with fresh strawberries or blueberries and whipped cream!Michelle

Linda, so glad it worked out for you and it really is yummy!!The lime juice sounds good too! I was thinking of trying either Blood or Seville Oranges. But I went to 2 markets this morning and I think I may have missed the season for them. So will have to wait until next year.Michelle
