I don’t usually write posts like this but tonight I made some oven roasted vegetables and the dish was so pretty. It just looked like summer to me and made me yearn for warm days, farmer’s markets and iced lemonade!
After roasting the Orange Cauliflower had turned a bright, sunny yellow and the Purple Cauliflower turned a deep royal purple. I was surprised when I opened the oven door!
Roasted Vegetables
Variety of Vegetables **See Notes
2 TBL melted butter
2 TBL EVOO
Salt and pepper to taste
Clean the vegetables. Put in a medium sized bowl. Add melted butter and EVOO, salt and pepper and toss.
Put the vegetables in a shallow baking dish and bake for 25 minutes at 400 degrees.
Note: I generally use brussel spouts and radishes for our roasted vegetables. But potatoes, beets, cauliflower, broccoli, sweet peppers and even tomatoes work very well.

So simple – so pretty – so appealing – I love the easy stuff that looks amazing – almost like you took a paint brush to it.
This dish turned out much more colorful then I expected! I knew the purple cauliflower turned a deep royal purple when roasted. But I wasn’t sure what the orange cauliflower would so and it turned out a bright sunny yellow!!! Of course the radishes and carrots always keep their colors very well.Next I’m going to try the green cauliflower!
Hi MichelleLOL … I roasted and grilled veggies too, with summer around the corner veggies will be the mainstay on our table. I am not so patiently waiting for tomatoes

Oooo! Roasted veggies are so good, aren’t they?! It’s amazing how a simple dish like this can taste so fabulous…By the way, that cauliflower is really pretty. I haven’ tried the “colored” stuff yet – looks like I’ll have to now!
