Man Food – Kielbasa with Apple, Peppers and Onion

My Mom calls this Depression Food. My husband, Mr. Tastebuds, calls it Man Food. I call it just plain Good!

I pick up recipes where ever and when ever I can and this particular recipe I picked up at the grocery store. Polish Sausage was on special that day and they were handing out samples. The demonstrator had an electric fry pan simmering away and OH MY, it smelled so good. I asked her about the recipe and she said it was how her Mom made it and quickly gave me the ingredients and I’ve made it ever since.

I have a taste for Kielbasa or Polish Sausage about once a year and it tastes especially good on a crisp, cool, gorgeous fall day! Fall is the perfect time for Polish Sausage!

Kielbasa with Apple, Peppers and Onion

1 lb of Kielbasa or Polish Sausage
3 medium onions, sliced into rings
1 small Sweet Red Pepper, seed and slice into rings
1 small Sweet Green Pepper, seed and slice into rings
Apple Juice **See Note
Couscous

Clean, remove seeds and slice peppers into rings. For the onions, remove skin and slice into rings.

In a deep, heavy fry pan add the polish sausage, peppers, onions, just dump it all in. And add Apple Juice, just enough to barely cover the sausage.

Make the Couscous according to package directions. You can use Apple Juice in place of the water for a more intense apple taste.

Simmer the sausage, peppers and onions for about 20 minutes. Please do not overcook the peppers and onions. The peppers should still have a bite to them and be brightly colored.

Remove sausage, slice on the diagonal. Plate Couscous, add some peppers and onions and top with slices of Kielbasa. Ladle with some warm apple juice from the pot. Serve and enjoy!

**Note: You can use 2-3 cups Apple Cider and just add enough water to cover the sausage.

    Nothing like a wonderful polish sausage made in Milwaukee :) This sounds delicious except my mister’s tastebuds doesn’t like peppers. I’ll just add extra onions!

    The best thing I love at our small town fair is the polish sausage and onions and peppers! It screams fall is here. I have never heard of this recipe, but I am very eager to give it a try. Thanks!

    I can guarantee the guys here would love this…they are very much into sausage and peppers. I usually pair it with sauerkraut this time of year, but this would be something different with the couscous.
