Pumpkin Pie Cupcakes with Apple Cider Frosting

My refrigerator is sometimes packed with Tupperware-like containers filled with small amounts of food, usually leftovers of some sort. And I had 1 cup of pumpkin leftover from another recipe. Hmmmm…what to do with 1 cup of pumpkin?

I hate to throw food away but sometimes, I honestly don’t have any use for it. But not this time, I was going to use up that 1 cup of pumpkin if it killed me. And guess what…I made the best cupcakes! Honestly the most delicious Pumpkin Cupcakes I’ve ever tasted. And what makes them even more special is I decorated them with some fun treats by Hershey’s, Pumpkin Spice Kisses, Candy Corn Kisses and Caramel Apple Kisses! I think I may be addicted to the Pumpkin Spice Kisses because I just opened a second bag and it’s been less then a week!

I made this recipe twice just to make sure it was as good the second time around and of course it was. But now I have 1 1/2 cups of leftover pumpkin in my refrigerator again. It’s a vicious circle!

Pumpkin Pie Cupcakes

2 c flour, sifted
1/2 c butter
1 1/4 c. brown sugar
2 eggs, separated
1 tsp sugar
1/2 c. buttermilk
1 c. pumpkin
1 tsp vanilla
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg

Topping: Apple Cider Frosting, Hershey’s Pumpkin Spice Kisses, Candy Corn Kisses and Caramel Apple Kisses

Makes 18 full-sized cupcakes

1. Cream butter and brown sugar.

2. To the creamed brown sugar add egg yolks, vanilla, cinnamon, ginger, nutmeg, pumpkin and beat until well blended. Continue beating and gradually add the buttermilk.

3. Place flour, baking soda, baking powder and salt in a sifter and sift into the brown sugar egg mixture, beating until well blended.

4. With an electric mixer beat the egg whites, gradually adding 1 tsp of sugar until whites form soft peaks. With a spatula gradually fold the beaten egg whites into the pumpkin brown sugar mixture, making sure to not over mix.

5. Fill cupcakes liners about 2/3′s full of batter.

6. Bake at 350 degrees for about 12 minutes or until tester comes out clean. Remove cupcakes from tin as soon as you can and cool on a rack. Decorate with Apple Cider Frosting, recipe below, and Hershey’s Pumpkin Spice Kisses, Candy Corn Kisses and Caramel Apple Kisses and sprinkled with coarse white sugar.

Apple Cider Frosting

8 ounces cold cream cheese
1 stick butter, firm but not cold
1/2 teaspoon salt
1 lb (4 cups) powdered sugar, sifted
2 tsp fresh apple cider

Combine butter, salt, and cream cheese in mixer and beat on medium speed 2-3 minutes. Add sugar until just incorporated. Don’t over mix. It should be thick but not fluffy. Add apple cider and stir well.

    Cupcakes are so very yummy looking! I love the decorative cupcake papers too. Yes, I always have bits of this and that in the fridge too. It’s tricky cooking for 2 sometimes. I have to come up with 3 or 4 recipes sometimes to justify buying something that comes in larger sizes.

    Michelle, you are killing me here! I mean KILLING me! Oh, those look good. YUM! And they are so cute.

    I have a recipe that my blogger friend Lisa and I think is the best coconut cake ever. Another friend served it on my birthday, and everyone loved it. Lisa said she could have licked her plate, and I felt the same way. I put a copy of the recipe on the bottom of my most recent post on my MIL’S birthday where we also served coconut cake (from the caterer). The friend that gave the recipe to me got it from someone whose signature dish this is. It’s in a local cookbook. Just thought you might like to check it out.     I can’t find those pumpkin spice kisses anywhere! Sigh.

    I love finding a bit of pumpkin left in the fridge because it just means that I’ll be baking something soon!

    I love the sound of apple cider frosting on a pumpkin cupcake. Fantastic! I haven’t tried any of those specialty Hershey’s kisses yet. Sounds like they’re delicious.
