Raspberry Lime Cupcakes in a Cloche!

We are moving into fall so quickly this year and I thought I would give summer a salute with some Raspberry Lime Cupcakes! What’s more summer then deliciously cool key limes and freshly picked raspberries still warm from a late summer’s sun.

I followed this recipe exactly as written which is not common for me. But it’s been a hectic week and frankly I did not feel like experimenting very much and sometimes it’s nice to just follow directions. Except of course I had to add sprinkles of sugar, lime zest and a fresh raspberry topper!

Key Lime Cupcakes

1 3/4 cup flour
1/2 c butter, room temperature
1 1/4 c sugar
2 large eggs
2 1/2 TBL fresh lime juice, before you juice the limes, grate and set the lime zest aside
1/4 tsp green food coloring
3/4 cup buttermilk

FROSTING:
8 ounces cold cream cheese
1 stick butter, firm but not cold
1/2 teaspoon salt
3 1/2 c powdered sugar, sifted
1/2 teaspoon vanilla

Topping: Coarse Sugar Sprinkles, Fresh Raspberry and Lime Zest

CUPCAKES:
1. Preheat oven to 350°F.
2. Line standard muffin pan with cupcake liners.
3. With a hand mixer, cream sugar and butter. Add vanilla, lime juice, food coloring and buttermilk.
4. Gradually add flour and completely blend.Spoon scant 1/3 cup batter into each liner.
5. Fill each cupcake liner about 1/2 full with batter.
6. Bake at 350 degrees for about 20-25 minutes or until a tester comes out clean. Remove to cooling rack and completely cool before frosting.

FROSTING:
Combine butter, salt, and cream cheese in mixer and beat on medium speed 2-3 minutes. Add sugar until just incorporated. Don’t over mix. It should be thick but not fluffy. Add vanilla.

    They look great! I never thought of doing something with my cake dome..you are so clever…but then I would have to eat it! And I would have snagged yours already!

    We are having the basement done, so I can’t get to my stuff! So the butternut was there waiting to be made into soup!

    Oooh…what scrumptious looking cupcakes…absolutely divine!!! This recipe sounds wonderful…thank you for sharing it with us! Seriously…those have got to be the prettiest cupcakes that I’ve ever seen!!! Raspberries are my favorite fruit…so they are literally the “icing on the cake”…hmmm, or topper on the cupcake! Hehe! What a lovely entry for the cloche party! By the way…I just love that pretty lt. aqua plate…wherever did you find that? It’s gorgeous!!!

    I found the cake plate at a little flea market in a village not far from my house. It was close to closing time and the vendor offered it to me for $8 and it included the heavy glass dome too. And there is not one chip any where…it’s in perfect condition.

    I really did not need another dome or cake plate but how could I pass up such a deal!
