Soft Pumpkin Cookies with a Cinnamon Glaze

Is Fall coming sooner then we think?

I was at the hardware store last week buying more canning jars and I had the oddest conversation. The checkout lady loves to talk and if I’m in a hurry I do avoid her line. But anyways, she started talking about canning and said “I have so many green tomatoes, I’m not sure they will be ripe before our first frost. What? Hey, it’s the middle of August here and this is Illinois not North Dakota!  Generally, I start worrying about frost around the middle of October, although our earliest recorded frost for this area was September 22nd which is still a good five weeks away. I think most green tomatoes will be plenty ripe by that time.

But doesn’t Fall seem much closer this year? I’m already getting blog traffic on my turkey leftover recipes!! Yet I still have some Summer Salads and Lemonade Recipes to post. Yikes!

With so much talk of Fall, I just could not get Pumpkin out of my mind.  So I just had to whip up a batch of my favorite Pumpkin Cookies with a delicious Cinnamon Cream Cheese Glaze. Even though, it is large cookie recipe, they lasted all of about 23 hours. I guess I wasn’t the only one hungry for Pumpkin! I’ve had this recipe for years in my handwritten recipe file and I’ve made it a gazillion times, but it still tastes just as good every time I make it!







Soft Pumpkin Cookies
Recipe adapted from “not a clue”

2 1/2 c all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 c butter, softened
1 1/2 c white sugar
1 c canned pumpkin
1 egg
1 tsp vanilla
1/2 c chopped pecans

Cream butter and sugar. Add egg, nuts, cinnamon, nutmeg, salt, baking soda, baking powder and vanilla and mix well.

Gradually add flour and mix until thoroughly blended.

Drop by rounded tablespoons onto parchment lined baking sheet.

Bake at 350 degrees until just lightly browned on the bottom. Thoroughly cool before frosting.







Cinnamon Cream Cheese Glaze
Recipe developed by my Mom

3 oz cream cheese, softened
3 TBL powdered sugar
2 TBL milk, plus extra if needed (I used half/half)
1/4 tsp vanilla extract (I used 1 vanilla bean scraped)
1/4 tsp cinnamon

Beat cream cheese with powdered sugar until completely blended. Add vanilla and blend.

Gradually add milk until glaze is slightly thinner then mayonnaise but not pourable. I had to add a bit more cream, probably not quite a TBL.

    Hi Michelle :-) Yes, I still DO read your postings, even though I havn’t commented often ….
    I think that a LOT of people are really anticipating fall this year due to the severity of the summer we’ve had. Heat is one thing, mix the heat with high humidity’s and most of us have had enough of it in a very short span of time!! I also think that like me, most people are hoping for a long fall this year, not one of those snap it’s fall, snap it’s winter years.
    How is your recovery coming friend? I think of you often!
    PLEASE go ahead and post your summer salads and the lemonade recipes!! I always find your twist/tweak on things interesting!

    Love, love these cookies! Pumpkin has been on my mind , too, so I finally bought a can of pumpkin puree ( just in case). Now I can make your lovely cookies!

    Oh, a friend of mine makes these & they are so good, almost muffin like! They are predicting an early first frost for us here in MN so perhaps it will be an early fall
