The Coconut Cure

The coconut palm is such an interesting tree and has unique characteristics. Although it takes almost a year for a single coconut to mature, the Coconut Palm can bloom up to thirteen times a year and therefore produces fruit continuously. I always say that when a plant blooms, it is similar to giving birth, because it’s take a tremendous amount of energy for any plant to bloom and most plants need to rest or go dormant afterwards. But apparently the Coconut Palm needs no rest at all! If the Coconut Palm was a woman, I’m sure she’d be wearing leather and lace and driving a Harley Davidson Knucklehead!

Coconut Water is not Coconut Milk. If you break open a coconut you will find a somewhat cloudy liquid inside, this is the Coconut Water. Coconut Milk is the liquid extracted from the white edible flesh of the Coconut similar to how apples are pressed for apple cider. But in order for Coconut Water to be used as a beverage, the coconut must be harvested while it is still green. If the coconut is harvested when it has turned brown, the Coconut Water is bitter and has lost almost all of it’s natural benefits.

Coconut Water seems to be the drink du jur and although it does have some wonderful benefits it will not cure cancer, control diabetes nor will it make a woman start lactating! But it does contain a fair amount of electrolytes and works well for rehydration, which is one reason it is now being sold as a F.D.A approved sports drink and popular as a great Hang Over Tonic! I’ve heard some compare the taste of coconut water to sucking on old socks, but I found it has a delicate, sweet flavor and although I’ve never tasted socks before, judging from the smell of previously worn socks, I’d say the coconut water is no where close!

Although coconut water is not a cure all, it is very low in sugar, salt, fat and carbohydrates and has no cholesterol. And contains a high percentage of minerals; Iron, Potassium, Calcium and Magnesium. So is it better then water? Probably not but it sure makes a unique and tasty beverage! I’ve substituted 1/2 cup coconut flour in baked goods and it adds a wonderful, chewy texture to cookies. I can’t wait to try the Coconut Water in bread!

The Coconut Cure

3-4 TBL pineapple juice
Coconut water, amount depends on size of glass
8-10 fresh mint leaves
1 lime
Minced coconut

Option: 1 tsp sugar or honey and/or Jigger of white Rum

Garnish: Fresh mint, wedge of pineapple and slice of lime

1. Run a lime around the rim of a glass and dip it in minced coconut. Set aside to dry about 5 minutes.

2. Put 4-5 mint leaves in the bottom of a tall glass and bruise to release some flavor.
3. Juice half the lime. Save the other half for garnish. Put 2 tsp lime juice in a tall glass.
4. The sweetness from the coconut water and the pineapple juice was plenty for me but if you need it, add sugar or honey. Stir to dissolve sugar.
5. Fill glass with ice and top off with coconut water.
6. Garnish with fresh mint, fresh pineapple and a slice of lime. Enjoy!

    You have my mouth watering. I love fresh coconut water but I thought that was the milk.

    Beautiful drink Velva. The Bahamians like to mix coconut water with gin. Not exactly healthy, but it has a kick. I like your version much better.

    thanks for all of the smiles and chuckles I got out of reading this posting Michelle!!! I needed those this morning!

    I am allergic to coconut. Eat it, get sick to my stomach. So I’ll pass on these recipes and ideas. But I enjoyed the read none the less!!! ;-D

    I adore coconut water. When I was in Thailand the past couple of times I drank ridiculous amounts since it was everywhere. Love the mint and pineapple!
